Strawberry Jam

Ingrédients

2 lbs strawberries

2 cups sugar

Juice of 1 lemon

Instructions

Clean strawberries, remove tops, and cut into quarters. Place in a large bowl and add lemon juice and sugar. Toss until well combined.

Cover and let sit at room temperature for 1 hour to draw out moisture (maceration).

Transfer the mixture to a large pot over medium high heat and bring to a slight boil, mashing the strawberries with a potato masher as they heat to help break them down.

As the mixture starts to thicken, reduce the heat to medium and continue stirring. Cook, stirring frequently, until thick, dark red, and foam free, about 30 to 45 minutes. Do not let it burn.

Remove from heat and cool completely, or place the bowl over ice to speed it up. Store in an airtight jar in the refrigerator and serve.
