One Pot Chicken Chorizo Lasagne

INGREDIENTS (serves 4):
100g chorizo, diced
600g chicken, diced
2 small red onions, diced
2 tsp paprika, salt and black pepper
1kg passata
100g reduced fat grated cheese
4 tortilla wraps, cut into strips
Instructions
In a deep sautĂ© pan or wok, fry the diced chorizo for 2â3 minutes until lightly crisped. Remove from the pan and set aside on a plate.
In the same pan, add the chicken and onions. Fry until the chicken is browned and the onions have softened.
Add the passata, paprika, salt and pepper. Stir everything together and bring to a boil, then reduce to a simmer. Let it cook gently for around 15 minutes (cover with a lid if you have one).
After 15 minutes, stir in the cooked chorizo and tortilla strips.
Sprinkle the cheese on top. Either cover with the lid and simmer for another 5 minutes, or place under a hot grill until the cheese has melted and is slightly golden.
Divide into 4 portions and serve hot!
