Greek Chicken and Potatoes

Ingrédients

1 ½ lb yellow potatoes, halved & cut into 4ths

2 bell peppers, sliced

1 zucchini, halved & sliced

1 red onions, sliced

1 ½ lb chicken, cut into bite-sized pieces (I did chicken breast & thighs)

1/3 cup olive oil

1 lemon, juiced

1/4 cup chopped parsley

3 garlic cloves, minced

1/2 tablespoon dried oregano

1/2 tablespoons paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt & pepper

1 tablespoon red wine vinegar

For garnish:

Cherry tomatoes, halved

Lemon slices

Chopped parsley

Fresh Dill

Tzatziki sauce

Crumbled feta

Instructions

Preheat oven to 425 degrees.

Arrange all veggies, potatoes and chicken to a large sheet pan.

Mix together olive oil, lemon, garlic, parsley, red wine vinegar and seasonings

Pour the marinade over the ingredients on sheet pan, toss to coat and bake in the oven for 45 minutes.

Top with tzatziki, fresh parsley, tomatoes and crumbled feta, or anything you like!
