Chicken Gnocchi Soup

Ingrédients

4 tablespoons butter

2 tablespoons olive oil

1 cup chopped celery (2-3 stalks)

1 tablespoon minced garlic (3-4 cloves)

1 cup shredded carrots (2 carrots)

1/2 teaspoon salt

1/2 teaspoon black pepper

2 teaspoons onion powder

1 tablespoon Italian seasoning

1/4 cup flour

3 cups chicken broth

3 cups milk

1 ½ cup heavy cream

2 cups cooked shredded chicken

8 ounce fresh baby spinach

16 ounces gnocchi

Instructions

Instructions

In a large pot, over medium heat, melt butter and heat olive oil.

Once butter is melted add in celery and cook for about 5-7 minutes until soft.

Add in garlic and stir. Let cook for 2 minutes.

Add in carrots. Season with salt, pepper, onion powder, and Italian seasoning.

Add in flour. Stir for 2 mins until everything is combined.

Add in chicken broth and stir well.

Add in milk and heavy cream, stir.

Toss in frozen spinach and shredded chicken, stir.

Turn up the heat and bring soup to a boil.

Gently add gnocchi and boil for 4-5 minutes.

Serve with breadsticks.
