Cottage Cheese Banana Cinnamon Oat Bake

1 cup cottage cheese

2 ripe bananas, mashed

2 large eggs

1 ½ cups rolled oats

1 tsp cinnamon

1 tsp vanilla extract

2 tbsp honey or maple syrup (optional)

1 tsp baking powder

Pinch of salt

Instructions

Preheat oven to 350°F (175°C). Grease or line an 8x8-inch baking dish with parchment paper.

Step 2: Mix Wet Ingredients

In a large bowl, combine cottage cheese, mashed bananas, eggs, vanilla extract, and honey (if using). Stir until smooth.

Step 3: Add Dry Ingredients

Add oats, cinnamon, baking powder, and salt..

Mix until fully incorporated.

Step 4: Bake

Pour batter into the prepared dish and spread evenly. Bake for 30-35 minutes until set and lightly golden on top.

Step 5: Cool & Serve

Let cool for 10 minutes before slicing. Serve warm or cold-delicious either way!

Tips:

For extra texture, add chopped nuts or raisins.

Use ripe bananas for natural sweetness.

Store leftovers in the fridge up to 3 days.
