Ingrédients

1 large chopped onion

4 tomatoes, diced

10 garlic cloves, finally chopped

1 cup red lentils

2 cups basmati rice

1/2 cup oil (1/4 cup for rice, 1/4 cup for frying garlic)

1/4 cup tomato paste

3.5 cups water

1 tbsp. salt

1 tbsp. cumin powder

Instructions

  1. Sauté the onion in a pan with oil until it goes browner than you’d expext

  2. add three tomatoes and cook until softened

  3. add washed rice and lentils and cook for a few minutes

  4. combine tomato paste and hot water and pour over. Bring to boil and then lower heat and leave to cook (about 20-40 minutes depending on heat and pan size)

  5. before it’s done, heat oil in a pan and add garlic and cumin and cook until bubbling and aromatic

  6. pour over rice

serve with more chopped tomato and parsley
