Grandma Kalo's Linzer Cookies

Ingrédients

7 cups flour

1¾ pound butter, softened (800g)

6 egg yolks

1 cup sugar

2 tablespoons vanilla sugar

zest from ½ lemon

1 cup almond flour / ground almonds

Few tablespoons sour cream

Jam of choice

Instructions

Mix butter + sugar, add eggs, add flour + remaining dry ingredients. Add sour cream a little at a time until combined.

Mix the dough the night before and leave in the fridge overnight.

The next day, leave the dough on the counter to soften a little to make it easier to roll.

Preheat oven to 400℉.

Roll out to ¼ inch thickness an cut out the shapes. Bake for 10min until very light golden brown.

Add a small spoonful of jam to the bottom halves of the cookies when warm, then place the other half on top.

Dust with powdered sugar.
