ITALIAN WEDDING SOUP

1 - 1 ½ pounds Italian sausage (mild)*
I large onion finely chopped
3T olive oil
6-7 cloves minced garlic
2 cans zuchini and tomatoes
I can diced tomatoes
6 cups chicken broth
I cup red wine
1-3 bay leaves
It. oregano
½ t. basil
1/8 t. ground red pepper
1 t. ground pepper
½ pound ditalini (small pasta)
Instructions
Brown sausage in skillet. Remove from pan and drain. In a large pot, heat olive oil on medium low for a few minutes. Add onion and saute until translucent. Add garlic and saute for 1-2 minutes. Add remaining ingredients and sausage. Simmer on low covered for 40 minutes or more. Remove extra grease. Before serving, cook pasta until almost dente. Add cooked pasta.** Adjust seasoning if
necessary.
* It isn't necessary to use Italian sausage. I usually use a ham sausage.
**I usually don't add the pasta to the soup, but instead put some pasta in the bowl and then ladle the soup over it. It keeps the leftover pasta from absorbing too much of the broth of the soup. Unless you are serving it for a group, and don't think you will have leftovers.
