Beef and Lentil Stew

2 lbs. stew meat (bottom round roast or chuck roast), trimmed
1 cup uncooked lentils
2 cups chopped carrots (300g)
2 cups chopped yellow onion (120g)
2 ½ cups quartered baby golden potatoes (400g)
178 g frozen peas
14 oz. can fire roasted tomatoes
25 oz. beef broth
2 Tbsp. coconut aminos
1 tsp. smoked paprika
1 tsp. cumin
1 Tbsp. minced garlic
1 bay leaf
2 tsp. salt
1 tsp. black pepper
1/8 tsp. cayenne pepper
Instructions
Trim beef by removing large areas of fat. Cut into 1 inch bite size pieces. Chop carrots, onions and potatoes.
Add all ingredients to the crockpot and cook on low for 8 hours.
