1. Preheat oven to 350°F (175°C) and grease an 8x8-inch baking dish.

2. In a blender or food processor, combine cottage cheese, eggs, milk, and vanilla until smooth.

3. In a separate bowl, whisk flour + baking powder (and any dry mix-ins if using).

4. Fold wet mixture into dry ingredients until combined. Add fruit or veggies.

5. Pour batter into the greased dish and smooth the top.

6. Bake for 25-30 minutes, or until a toothpick comes out clean and the top is lightly golden.

7. Let cool slightly, then cut into toddler-sized squares. Serve warm with yogurt, fruit, or a little nut butter.
