Caramelised Onion Butter Beans

Ingrédients

few tbsp olive oil

4 garlic cloves

2 large white onion

handful button mushrooms

vegetable stock

big bunch fresh parsley

4 tbsp nutritional yeast (or cheese)

splash of soy cream

1 jar large butter beans

salt n pepper to taste

garnish with cream, oils, crispy onions and more parsley

Instructions

fry the thinly sliced onion, low and slow until golden and caramelised.

add the finely minced garlic and mushrooms then sear until they soften and brown slightly.

add the stock, nutritional yeast, parsley and beans with salt n pepper then simmer to reduce. Stir in the cream towards the end.

garnish the serve and enjoy with some nice crusty bread.
