160 g Penne
2 piece Carrot
1 Onion
2 clove Garlic
1 Bell Pepper
1 Courgette
3 dl Cream
40 g Tomato Paste
1 tsp Basil
1 tsp Oregano
1 tbsp Olive Oil
Salt
Pepper
30g Shredded Cheese
Instructions
Boil pasta in salted water.
Sauté veggies (carrot, onion, bell pepper, zucchini, and garlic) in olive oil until soft.
Add tomato paste to the sautéed vegetables and cook for a few more minutes.
Stir in cream, herbs, and cooked pasta. Add some pasta water to create a smooth sauce.
Season with salt and pepper, and serve with grated cheese on top.
