10-minute Chili Peanut Noodles

9 oz noodles
2½ tbsp peanut butter
1 tsp red pepper flakes
⅓ cup sliced green onions
2 tsp sesame seeds
5 garlic cloves, minced
1 tbsp sugar
1 tbsp chili crisp
1 tbsp rice vinegar
2 tbsp soy sauce
3 tbsp coconut milk
⅓ cup avocado oil
3 tbsp reserved pasta water
Optional toppings: green onions, chopped peanuts, julienned cucumbers, extra chili crisp
Instructions
Cook noodles until al dente. Rinse under cold water and reserve some of the pasta water.
Add all sauce ingredients to a cold pan, except the noodles, oil, and pasta water.
Heat the avocado oil until it’s very hot.
Carefully pour the hot oil over the sauce ingredients and stir until everything is combined and smooth.
Add the noodles and toss to coat evenly.
Pour in pasta water as needed and mix until the sauce becomes glossy and silky.
Finish with your favorite toppings and serve.
