10 hard boiled eggs (or to preference)
1 kg pork belly cut into 2 inch cubes
2 tbsp fish sauce
3 tbsp sugar
1 tbsp shoyu
1 lt coconut water
500 ml chicken broth/water
Shallots or onion (optional)
4 chopped garlic cloves
Green onion
black pepper
Instructions
Marinade pork belly with garlic, 1 tbsp sugar, and 1 tbsp fish sauce for thirty minutes.
In a pot add 2 tbsp sugar and 1 tbsp water and caramelize over high heat.
Before the caramel becomes dark add in the pork belly and brown all sides.
Add coconut water and 500 ml of water and boil.
Simmer without lid for 2 hours until liquid reduces and thickens.
30 minutes after starting to simmer add in the eggs and optional onions.
Add in green onions a few minutes before finishing.
Add in fish sauce and shoyu to taste.
Garnish with black pepper.
