ROASTED TAMARI SUPER-SEED MIX

Ingrédients

70g sunflower seeds

70g pumpkin seeds

40g sesame seeds

2 tbsp nutritional yeast

2 tsp dried rosemary

1 tsp smoked paprika

2 tbsp tamari sauce

1 tbsp olive oil

Instructions

Preheat the oven to 120°C/100°C fan/gas ½ and line a large baking tray with parchment paper.

Put the sunflower, pumpkin and sesame seeds into a large bowl. Add the nutritional yeast, dried rosemary and smoked paprika and mix.

Add the tamari sauce and olive oil, and mix everything until the seeds are well coated with the seasoning.

Spread the seed mixture on the lined baking tray and bake in the oven for 30 minutes. Remove and let the seeds cool down completely, then transfer them to a clean jar or container. Store in the fridge (for optimum freshness) for up to 3-4 weeks.

Notes

This seed mix is super-versatile. It can be used as a crispy salad topping, a soup garnish or an all-purpose seasoning that will heighten the final taste and add texture. It also adds extra nutrients to your plate, such as manganese and calcium from sesame seeds, vitamin E from sunflower seeds and zinc from the pumpkin seeds, to mention just a few.
