Sausage & Gnocchi Chilli Pesto Tray Bake

Ingrédients

500g gnocchi

Handful of cherry tomatoes

Diced red onion

Handful tenderstem broccoli

6 veggie sausages

2tsp minced garlic

Chilli flakes

parsley

salt & pepper

1 jar of chilli pesto

Mozzarella

Garlic bread

Instructions

Preheat your oven to 180 degrees.

Pop your gnocchi, cherry tomatoes, diced red onion, tenderstem broccoli & torn up veggie sausages onto a baking tray.

Season with garlic, salt, pepper, chilli flakes and parsley and add chilli pesto. Mix it all up.

Swill out the pesto jar with around 40ml of water and add it to the tray.

Pop into the oven for 25 minutes.

Remove and give it a toss before adding some torn up mozzarella (cheddar would be lush too) and pop back into the oven for 5 minutes.

Serve up with some garlic bread and enjoy !!! xxx

LEFTOVERS: keep in the fridge for up to 3 days and reheat in the microwave for a v yummy lunch 🫙🫙🫙
