Salad Base

1 can (15 oz) chickpeas, rinsed & drained

½ cup feta cheese, crumbled

⅓ cup dried cranberries

¼ cup red onion, finely diced

2 celery ribs, chopped

¼ cup fresh parsley, chopped

Lemon Vinaigrette

3 tbsp extra virgin olive oil

2 tbsp fresh lemon juice

1 tsp honey

Salt & black pepper to taste

Chopped cucumber

Toasted walnuts or pecans

Instructions

Prepare Salad

In a large bowl, combine chickpeas, feta, dried cranberries, red onion, celery, and parsley.

Make Dressing

Whisk together olive oil, lemon juice, honey, salt, and black pepper until smooth.

Toss

Pour vinaigrette over the salad and gently toss until evenly coated.

Rest

Let salad sit for 10 minutes so the flavors blend beautifully.
