Catherinen O'Hara's No-Fry French Fries

Ingrédients

2 lbs unpeeled yukon gold potatoes or peeled russet potatoes

2 tbsp olive oil

1 tsp kosher salt

1/4 tsp freshly ground pepper

1 tbsp paprika

italian seasonings or chili flakes to taste, optional

Instructions

Preheat oven to 400.

Cut potatoes into size of fries you prefer. Put olive oil on a large rimmed cookie sheet and spread potatoes in one layer.

Sprinkle with salt, pepper, paprika and other seasoning, if using. Toss well.

Roast 10 minutes and then toss again to prevent sticking. (Or line baking sheet with parchment paper before adding olive oil.) Continue roasting for 20 to 30 minutes until crisp and browned.

Makes 4 to 6 servings.
