Ingrédients

1 cup flour

¾ cup cornmeal, or cornbread mix if you’d like this to be a little cakier and sweeter

1 teaspoon baking powder

2 tablespoons sugar

1 tablespoon salt

3 tablespoons olive oil

2 eggs

¾ cup milk or buttermilk, but this is a guess. You might need more or less. I show the texture I am looking for in my video.

Optional (from book):

2 tablespoons parmesan cheese

Handful of fresh chopped parsley

1 red chili, deseeded and finely chopped

Instructions

Instructions: Combine the dry in a bowl, add the wet, bring together, shape into 4 squares with well oiled hands and a well oiled bench scraper on parchment/silpat. When about ½ inch thick, square, with sides that are flattened with bench scraper - make diagonal lines from corner to corner with a bench scraper. It should look like an X that leaves 4 triangular pieces.

Bake at 300 degrees fahrenheit for 1 hour, or at 375 degrees fahrenheit for 45 minutes if you’d like yours to be a bit more airy and flakey. This is up to your preference.
