Glazed Sausage and Baby Potato Bake

1 lb smoked sausage, sliced
1 1/2 lbs baby potatoes, halved
2 tbsp olive oil
3 tbsp honey
2 tbsp Dijon mustard
1 tbsp soy sauce
2 cloves garlic, minced
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 tbsp chopped parsley (optional)
Instructions
Preheat oven to 400°F (200°C) and grease a baking dish or sheet pan.
In a large bowl, toss potatoes with olive oil, paprika, garlic powder, salt, and pepper.
Spread potatoes on the pan and roast for 20 minutes.
In a bowl, mix honey, Dijon mustard, soy sauce, and garlic.
Remove potatoes from oven and add sausage slices.
Pour glaze over everything and toss to coat.
Return to oven and bake for another 20–25 minutes until potatoes are tender and sausage is caramelized.
Garnish with parsley and serve hot.
