Creamy Lemon Orzo

8 oz chicken breast (2 breasts)
juice of ½ lemon (3-4 tbsp)
6 oz broccoli
4 oz orzo (dry)
2.5 tbsp half & half
2.5 tbsp Boursin garlic & herb
lemon pepper seasoning
salt & pepper

Instructions
1. Season chicken with lemon pepper on each side.
2. Add to a pan on low-medium heat and cook, flipping halfway, until done. Set aside and wipe pan if needed.
3. Add 1.5 cups water, orzo, and a pinch of salt to the same pan. Cover and cook 10-12 minutes until orzo is done and water is
nearly absorbed.
4. Stir in Boursin, cooked broccoli, half & half, and lemon juice. Mix until creamy, simmering a little longer if needed to thicken.
5. Serve the orzo topped with chicken and optional Parmesan.
