Ingrédients

2 Cod Fillets

3 x White Potatoes

80g Spinach

30g Cheese

20g Panko Breadcrumbs

1tbsp Cornflour

6g Dijo Mustard

Veg Stock Cube

150ml Milk

Instructions

Add chopped potatoes to baking tray and drizzle over oil, pepper & salt

Cook for 25 Minutes

Boil Kettle

Add 1/2 Grated cheese, Panko Bread crumbs , pepper and olive oil to bowl and mix This is your cheesy breadcrumbs

Dissolve stock cube in 50ml of boiling water - add 150ml Milk

Add rest of cheese, cornflour to a pot and mix

Add Dijon mustard and stock and mix

Heat above on a medium heat until cheese has melted and sauce thickened - this is the mornay sauce

add cod to over proof dish top with mornay sauce a cheesy breadcrumbs

cook in oven for 18 mintes

Cover spinach in hot water and drain - add a knob of butter and cooked peas
