Pear Pie

5 or 6 slightly ripe Bosc or Danjou pears, peeled and sliced
1 cup (or slightly less) sugar
1 tsp cinnamon
1/4 tsp ground nutmeg or freshly grated
2 tbsp tapioca
3 pats butter
Double pie crust (Art of the Pie recipe)
Egg wash (optional)
Instructions
Preheat oven to 425 degrees. Peel and cut pears into a bowl. Sprinkle sugar, cinnamon, nutmeg and tapioca on pears and gently mix.
Place bottom pie shell into deep dish pan. Pour pear mixture into shell. Place butter on top of fruit. Cover with top crust. Pierce a few holes in the top crust to allow venting.
Optional - brush top with egg wash.
Bake at 425 degrees for 10 minutes. Reduce heat to 350 degrees and bake for 40-45 minutes more.
