Creamy Tomato Pasta

2 tablespoons olive oil
6 garlics cloves sliced
2 cups cherry tomatoes
pinch of sea salt
1/4 cup diced onion
1/2 box pasta, I used angel hair. It’s great with other pasta too.
1/4 cup white wine (or broth)
6 tablespoons cold butter
Reserved pasta water 1-1 1/2 cups
Lemon juice
Fresh basil, Parsley, and Parmesan
Instructions
Heat a pan to medium high heat. Add olive oil and garlic. Cook for 2-3 minutes until garlic is golden and fragrant.
Add onion, cherry tomatoes, and sea salt. Cook for a few minutes until tomatoes have softened. *While tomatoes cook, boil pasta according to directions on box in salted water. Save 2 cups of pasta water.*
Once tomato’s are soft and created a sauce in the pan. Add lemon zest and white wine (or broth). Cook until liquid has reduced by half.
Remove from heat & add cold butter. Stir into butter has melted and emulsifies with tomato juice to make a creamy sauce. Add pasta water 1/2 cup at a time.
Add pan back to the heat and cook until sauce has thickened. Add cooked pasta, fresh basil, fresh parsley, and Parmesan. Mix everything well and enjoy on its own or crispy chicken cutlets ❤️
