Coconut Chicken And Rice

Ingrédients

1 can coconut milk

Smoked paprika

Cumin

Coriander

Garlic powder

Salt

Pepper

2-3 boneless skinless chicken breasts

1 cup water

1 cup rice

Instructions

Set aside one cup of the coconut milk. Put remaining coconut milk in a medium bowl and add seasonings to taste. Cut chicken into long strips or chunks and place in the bowl to marinate for 15-30 minutes.

Use reserved coconut milk and the water to cook rice according to package instructions.

Remove chicken from marinade, grill or sauté until cooked through. Serve over cooked rice, add peanut sauce or other Asian condiments.
