Slowcooker Sticky Honey Cashew Chicken

3-4 chicken breasts, cut into chunks
2 tbsp dark soy sauce
2 tbsp light soy sauce
1-2 tbsp honey
1 tbsp hoisin sauce
1 tbsp rice vinegar
1 onion, cut into chunks
2 peppers, cut into chunks
3 spring onions, chopped chunky
Pinch of pepper
Handful of cashews
4 garlic cloves, minced
1 tsp ginger purée (or fresh ginger)
100ml chicken stock
2 heaped tbsp cornflour (, to thicken)
To serve:
2 spring onions, chopped
1 tbsp sesame seeds
600g basmati rice, cooked
Instructions
Add all of the ingredients to your slow cooker and cook on HIGH for 3â4 hours or LOW for 7â8 hours.
Once cooked, stir through the cornflour to thicken the sauce, and add another handful of cashews for extra crunch, if you wish. I also add some fresh spring onions
Serve over a bed of fluffy basmati rice and finish with chopped spring onions and sesame seeds.
