6-7 Egg yolks
80g ish Pecorino Cheese (grated)
Pistachio 200g (whole aldi packet de shelled)
Pepper
500g of pasta
Guanciale (or pancetta)
Instructions
make the pistachio paste in a powerful food processor
cook guanciale until crisp
boil the pasta
Whisk 6 egg yolks with pepper. Add the pistachio paste and pecorino cheese and mix it.
Incorporate a bit of the cooking water to cheese mix. (let water cool down)
add the pasta to guanciale
Pour over he sauce over the pasta and mix
Place the pasta on a plate and sprinkle with chopped pistachios
