Meatless Meat Balls

Ingrédients

1C whole wheat flour

1C chopped cashews or walnuts

1C vegetables, finely chopped (carrots & celery are good)

½ onion, minced

½C rice or beans (cooked) herbs

2 eggs, lightly beaten

2T tamari or soy sauce

Instructions

Combine flour, nuts, vegies, onion, rice or beans and any combination of your favorite herbs. Add eggs and tamari and work in until well combined.

Pour about an inch of water into a large frying pan. Heat until simmering. Flour your hands. Roll batter into ping-pong size balls and place in water. Cover and simmer for about 15 minutes.

Notes

These rounds are amazingly similar in appearance and texture to the real thing. Serve them with your favorite pasta and tomato sauce.
