Sausage & Broccoli Pasta

Ingrédients

2-3 pork and fennel sausages (I used Salsiccia brand for best macros)

1.5 cups orecchiette

1 onion, finely sliced

2.5-3 cups broccolini, chopped

3 garlic cloves, sliced

1 tsp chilli flakes

1 tbsp butter

1/2 cup Parmesan, finely grated

Salt and black pepper

½ lemon, juice

Instructions

Bring a large pan of well-salted water to the boil and cook the pasta until al dente. Reserve a mug of the pasta water before draining.

While the pasta cooks, chop the tenderstem broccoli and slice the garlic and onion. Remove the sausage casings and crumble the meat.

Add the sausage to a large frying pan over medium heat and cook until well browned and crispy, breaking it up as it cooks. Add the onion and garlic and cook for a few minutes until soft and fragrant. Stir in the broccoli and chilli flakes, then add a splash of pasta water to deglaze the pan and loosen everything.

Add the cooked pasta to the pan with the butter and a little more pasta water. Toss until glossy and coated. Finish with Parmesan, lemon juice, plenty of black pepper, and adjust seasoning if needed.
