Almond Butter Date Ice Cream Bars

The original way with cashews is still my fave but this is still a solid 8/10.

MARZiPAN Date Ice Cream Bars

3/4 cup almond butter

20 large medjool dates

2 cups water

1 Tablespoon Almond Extract

Big pinch of salt

Blend all of the ingredients until super super smooth. I find it hard to measure nut butters so if you are in doubt put more rather than less.

1/3 cup chocolate chips

1/3 cup

Coconut oil

Almond slices

If you have the silicone pan (linked in bio): melt 1/3 cup chocolate chips by putting it in the microwave in 15 second increments and mixing in between (otherwise the chocolate will get messed up). Mix a little coconut oil in there it makes it easier to spread. Coat the bottom of the pan with the chocolate.

Then add the almond date mixture. Freeze overnight.

Then melt a little over 1/3 cup chocolate chips (w a little coconut oil) to smooth on top. Sprinkle with almond slices.

It hardens super quickly, so you can pop the block out and slice immediately. store in muffin cups in a container/box so they don’t stick together. Keep in freezer.
