Chinois Chicken Salad

Yields: 4 servings

Ingredients:

– 3 cups Napa cabbage, finely shredded

– 1 cup red cabbage or radicchio, finely shredded

– 1 cup cooked chicken breast, shredded or julienned

– 1/2 cup julienned carrots

– 1/2 cup julienned snow peas

– 1/4 cup scallions, thinly sliced

– 1/2 cup crispy wonton strips or fried rice noodles

– 1 tbsp fresh cilantro, chopped

– 1/2 mango, julienned (optional)

For the dressing:

– 2 tbsp rice vinegar

– 1 tbsp soy sauce

– 1 tbsp hoisin sauce

– 1 tbsp sesame paste (or tahini)

– 1 tsp Dijon mustard

– 1 tsp sugar

– 1 tsp finely minced garlic

– 1 tsp finely grated fresh ginger

– 1/2 tsp chili oil (adjust to taste)

– 1/3 cup grapeseed or vegetable oil

– 1 tsp sesame oil

Instructions

1. In a bowl or blender, whisk or blend together rice vinegar, soy sauce, hoisin, sesame paste, mustard, sugar, garlic, ginger, and chili oil. While whisking or blending, slowly drizzle in the grapeseed oil and sesame oil until emulsified and smooth. Taste and adjust seasoning as needed.

2. In a large bowl, combine Napa cabbage, red cabbage, carrots, snow peas, scallions, and chicken.

3. Toss the salad with just enough dressing to coat. Let sit for 2–3 minutes to absorb flavors.

4. Top with crispy wontons and cilantro. Serve immediately.

Notes

1/2 mango julienned adds a sweet pop like in later versions.
