Sausage and Kale Soup

1 pound Italian sausage (453.592 grams)
1 medium yellow onion (diced)
4 garlic cloves (minced)
1 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
8 ounces cremini mushrooms (diced, 226.796 grams)
4 cups kale (chopped, large stems removed, 170 grams)
6 cups chicken broth
1 cup penne noodles (uncooked, 102 grams)
15 ounces Northern beans (drained and rinsed, 448 grams before draining)
Instructions
Heat a large soup pot over medium heat. Add the Italian sausage and break it up, browning it for about 3 to 5 minutes until you no longer see pink.
Add in onions, garlic, salt, pepper, and crushed red pepper flakes. Cook for 3 minutes. Add the mushrooms and continue cooking for 5 minutes until the mushrooms are soft. Add the kale, cooking it until it is bright green, about 3 minutes.
Add the chicken broth and bring it to a roaring boil. Then add the penne and cook for about 1 minute less than what is indicated in the package directions.
Finally, stir in the beans. Allow them to heat through, about 1 minute.
Taste the soup and add more salt and pepper to taste. Serve with grated Parmesan cheese if desired.
