Moist Apple Cake with Cinnamon Sugar Crust

Ingrédients

2 cups (250g) all-purpose flour

1 ½ tsp baking powder

1 tsp baking soda

½ tsp salt

1 tbsp ground cinnamon

1 cup (200g) granulated sugar

½ cup (115g) unsalted butter, softened

2 large eggs

1 tsp vanilla extract

1 ½ cups grated peeled apples (about 2 medium apples)

1 cup (240ml) buttermilk

For the cinnamon sugar topping:

¼ cup (50g) granulated sugar

1 tsp ground cinnamon

Instructions

Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch (23x33 cm) sheet pan.

In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.

In a large bowl, cream butter and granulated sugar until light and fluffy.

Beat in eggs one at a time, then stir in vanilla extract.

Add dry ingredients alternately with buttermilk, beginning and ending with dry ingredients. Mix until just combined.

Fold in grated apples gently.

Pour batter into prepared pan and smooth the top.

Mix sugar and cinnamon for the topping in a small bowl and sprinkle evenly over the batter.

Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.

Let cool in the pan before slicing.
