Flourless Chocolate Cake

Ingrédients

2 1/2 cups 811 dark chocolate chips

1/2 pound butter

1 1/2 cups sugar

2 teaspoons espresso powder

1 teaspoon salt

6 eggs whole

2 yolks

1 cup cocoa powder

1 cup heavy cream

Instructions

Melt chocolate and butter in a double boiler add sugar and espresso powder. Remove from double boiler and allow to cool. Whisk in eggs and yolks vanilla salt and cocoa powder till incorporated. In a seperate bowl whisk heavy cream to medium peaks. Fold into chocolate mixture in 3 steps. Put in Pam lined pan with parchment disk in bottom. Bake 350 till outside is set and just a little wobble in center. Cool on rack for 3 hrs . Refrigerate overnight
