Lemon Blueberry Loaf

Ingrédients

1 3/4 cups (220g) flour

1/2 tsp (3g) salt

1 tsp (4g) baking powder

1/4 tsp (1g) baking soda

1/2 cup (113g) softened butter

1 1/4 cups (250g) granulated white sugar

3 eggs

1/2 tsp (2g) vanilla

1/2 cup (120g) buttermilk (i didnt have so i used milk and 1 1/2 tsp lemon juice)

1/2 cup (120g) greek yogurt

2 tbsp (30g) fresh lemon juice

1 tbsp (6g) lemon zest

6 oz (170g) blueberries (fresh or frozen)

note: try to make sure everything is room temp! in a large bowl, cream together butter and sugar. then add in the eggs and vanilla, mix well. add in the buttermilk, sour cream, lemon juice, and zest. mix well and set aside. in another bowl, whisk together the flour, salt, baking powder, and baking soda. add this in to the wet mixture and fold gently to mix. once there are only flour streaks left, fold in the fresh or frozen raspberries. note: toss them in a little bit of flour before adding them in to help prevent them from sinking. pour into loaf pan and bake at 350 for 65-70 min (time will very based on pan size, i used a 9x5 pan). #lemonloaf #blueberry #lemon #recipe #baking
