Spicy Thai Coconut Curry Shrimp

1. 1 lb shrimp (peeled & deveined, seasoned)

2. 2 tbsp red curry paste

3. 1 can (13.5 oz) coconut milk

4. 1 lime (juice + zest)

5. 1½ cups jasmine rice

Instructions

Cook rice according to package directions.

Season shrimp with salt, garlic powder, onion powder, and black pepper.

In a hot pan, sear shrimp in oil until just cooked (about 2 minutes per side), then remove from pan.

In the same pan, add coconut milk and red curry paste, stir, and simmer 2–3 minutes to blend flavors.

Squeeze in lime juice + zest, then pour curry sauce over shrimp and rice to serve. (Optional: garnish with cilantro)
