Beef Ho Fun

Beef marinade:
200g beef flank/skirt
1 1/2 tsp light soy sauce
1 tsp shaoxing wine
1 tsp cornstarch
1 pinch of ground white pepper
1 pinch of caster sugar
1 tsp veg oil
For the noodles:
400g ho fun noodles
3 spring onions / garlic chives
3 garlic cloves
Small knob of ginger
2 tbsp light soy sauce
1 tbsp dark soy sauce
2 tbsp Shaoxing wine
1 1/2 tsp sesame oil
Pinch of ground white pepper
Pinch of sugar
1/4 tsp MSG
60g bean sprouts
Bunch of pak choi
Veg oil
Instructions
Slice the beef against the grain into 1cm slices. Marinate and set aside.
Cook the noodles in boiling water then rinse with cold water and drain.
Slice the ginger and garlic into thin slices and wash your bean sprouts. Also, slice the spring onions into 3 parts, lengthways.
Add 2 tbsps of veg oil to a wok on medium-high heat and add the beef. Fry for 5 mins then set aside.
Add the ginger, garlic and spring onions to the wok along with a tbsp or two of veg oil, cook for a minute or so.
Add the noodles, cooked beef and the remaining seasonings to the wok. Fry for a couple of mins, making sure everything’s coated well, then add the bean sprouts and pak choi, and cook for just 1 min
