Crockpot French Onion Meatloaf with Melted Swiss Cheese

2 lbs ground beef

1 envelope (1 oz) dry French onion soup mix

1/2 cup plain breadcrumbs

2 large eggs

1/4 cup milk

1 tbsp Worcestershire sauce

1/2 tsp garlic powder

1/4 tsp black pepper

1/2 cup shredded Swiss cheese (mixed in)

6–8 slices Swiss cheese (for topping)

Optional: chopped parsley for garnish

Instructions

Prepare the meatloaf mixture: In a large bowl, combine ground beef, dry onion soup mix, breadcrumbs, eggs, milk, Worcestershire sauce, garlic powder, pepper, and shredded Swiss. Mix just until everything is combined — don’t overwork the meat.

Shape the loaf: Form the mixture into a loaf shape and place it into your slow cooker (spray the insert first for easier cleanup). You can also use a slow cooker liner.

Cook low and slow: Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the internal temperature reaches 160°F.

Add the cheese topping: About 10–15 minutes before serving, lay the Swiss cheese slices over the top of the meatloaf, cover again, and let them melt.

Rest and serve: Once the cheese is melted and gooey, turn off the slow cooker. Let the meatloaf rest for 5–10 minutes, then slice and serve.

Serving Tip: Perfect with mashed potatoes or roasted green beans on the side.

Storage: Refrigerate leftovers for up to 4 days, or freeze slices for a quick meal later.
