Banana Bread with a Twist

300g bananas (weighed without skin)
2 medium eggs
120g Greek yoghurt (I used 0%)
1 tsp vanilla extract
120g oats or oat flour
50g vanilla protein powder
1/2 tsp cinnamon
1 tsp baking powder
Pinch of salt
Instructions
Preheat oven to 175°C/375°F and line a baking tin with parchment paper or use a non-stick one.
In a bowl, mash the bananas. Add eggs, Greek yoghurt and vanilla and mix everything well.
Add oat flour, protein powder, baking powder, cinnamon and salt. Mix everything.
Add to the baking tin. Bake in the oven for around 35-40 minutes or until a toothpick comes out clean.
Cool, slice and store in fridge or freeze slices individually.
