Creamy Vegan Red Pepper Pasta

Ingrédients

2 red bell peppers Sliced in half lengthwise, seeds and stem removed

1 tbsp olive oil

3 cloves garlic smashed (not minced)

1/2 of one medium yellow onions diced

1/4 cup sun-dried tomatoes

1 cup milk of choice

1 tbsp cornstarch *can sub with arrowroot starch

2 tbsp nutritional yeast

1 tbsp dried basil

1/2 cup low sodium vegetable broth

salt and pepper to taste

red pepper flakes optional for spice

4 cups uncooked pasta

Instructions

Roast peppers, garlic and onion for about 30 mins at 400F

Combine everything in a food processor and blend until smooth

Add to your favourite pasta!
