  • large number of red chilli peppers

Instructions

  1. deseed about 90% of your chillies for spice management

  2. add to food processor with a little bit of garlic and ginger, lots of salt and a bit of sugar. Puree for 3-4 mins until all broken down.

  3. leave out of the fridge, and uncovered to ferment for around 5 days. Mixing it up once a day. You should see little bubbles once the fermentation process has started and is a good sign.

  4. once you’re happy put in back in the blender with some normal vinegar, a few teaspoons to start with / to taste and whizz up again
