CHIPOTLE CHICKEN BOWL

Ingredients
1 (3 ounce) cooked chipotle rotisserie chicken breast cup canned Mexican beans
½/ small golden potatoes, quartered
4 lettuce leaf corn cob, trimmed and quartered avocado, sliced tablespoon sour cream tablespoon cilantro, chopped lime wedge
Instructions
Directions Preheat oven to 400 °F.

Remove the breast from rotisserie
2. chicken; cut into slices.
Line baking sheet with foil and coat 3 with cooking spray. Arrange potatoes on baking sheet; season to taste. Cook for 15 minutes, turn, then cook for 3-5 additional minutes.
Cook corn in microwave on high
4. for 5 minutes, turn, then cook for an additional 3-5 minutes.
Heat beans according to package
5. instructions.
To assemble bowl, first spoon in beans,
6. then top with sliced chicken. Next add potatoes and corn, followed by the avocado and lettuce. Top with sour cream and cilantro. Serve with a lime wedge.
