Perfect Lemon Curd

3/4 c fresh lemon juice
1 tbsp grated lemon rind
3/4 c sugar
3 eggs
1/2 c unsalted butter
Instructions
In a 2 quart sauce pan, combine lemon juice, zest, sugar, eggs and butter.
Cook over medium low heat until thick enough to hold marks from whisk and first bubbles appear on surface, about 6 minutes. (I find this takes longer).
