Egg-Sausage Casserole

1 dozen eggs
1 cup grated sharp cheese
1/2 cup milk
1 lb. sausage, ham or bacon
1 can mushroom soup
1 2-oz. can mushrooms
1/4 cup milk
4 slices of bread
3/4 tsp dry mustard powder
1/2 green pepper, chopped
3 green onions, chopped
Salt and pepper to taste
Instructions
Brown meat or sausage and cut into 1-inch pieces. Chop onion and pepper. Remove bread crusts and butter a 2.5 to 3 QT dish and line with bread. Cover bread with cheese and sausage. Beat eggs, add mustard, milk, onions, salt, and pepper, then pour over bread, cheese, and meat. Cover tightly and refrigerate overnight. Bake uncovered at 300°F for 1.5 hours. Just before serving, dilute mushroom soup with 1/4 cup milk, add mushrooms, and pour over casserole.
