MEDITERRANEAN STYLE TUNA FUSILLI

Ingrédients

Salt and black pepper

250g fusilli

1 tbsp olive oil

2 shallots, finely chopped

2 tsp Italian herbs

1 x 400g tin of whole plum tomatoes

150mI chicken or vegetable stock

10-12 black olives, sliced

2 x 160g tins of tuna packed in sunflower oil, drained

6 artichoke hearts, chopped

Instructions

1 Bring a large pan of salted water to a boil and cook the pasta according to package instructions.

2 Heat the oil in a large pan over a medium heat and add the shallots and herbs. Cook for 3-4 minutes, stirring regularly.

3 Add the plum tomatoes, stock and olives. Season with salt and pepper.

4 Cover with a lid and cook over a medium- low heat for five minutes.

5 Add the drained tuna and artichoke hearts. Cover and cook for another three minutes. Stir in the pasta, adding a splash of cooking water if needed to loosen. Serve immediately.
