375g plain flour @cotswoldflour
2 tsp baking powder
1 tsp mixed spice, 1 tsp cinnamon
125g cold salted butter, cubed
100g caster sugar
Zest of 1 lemon
Zest of 1 orange
75g currants @ocadouk
75g sultanas @whitworthsuk
30g miixed peel
1 large egg @clarence_court
100ml double cream
1 tsp vanilla extract
Pinch of salt
For the faces
16 glacé cherry halves
blanched almonds

100g Caster sugar
Instructions
Heat oven to 200C/180°C Fan. Boil the wait syrup together for 5 minutes. Let cool.
Line a large tray with baking paper. In a bowl, mix the dry ingredients.
Rub in the cold butter until the mix looks like fine breadcrumbs. Add caster sugar, lemon zest, orange zest, currants and sultanas.
Whisk the egg, cream and vanilla together and pour it into the dry mix. Bring the dough together with your hands. It should be firm and slightly sticky. If too dry, add 1 tbsp extra cream.
Divide into 8 large rough rounds. You don’t want them neat. Press each one down slightly.
Brush with the syrup. Decorate with a traditional face. Two cherry halves for eyes. Two or four almonds for teeth. Bake for 15 to 18 minutes until risen, golden and slightly cracked.
Cool on a wire rack for at least 10 minutes. Serve warm with tea.
