Spinach Cottage Cheese Protein Pancakes

Ingrédients

1 cup cottage cheese

2 large eggs

1 cup fresh spinach

1/2 cup oats (or oat flour)

1/2 tsp baking powder

Pinch of salt

Butter or cooking spray for the pan

Optional but delicious:

Shredded cheese

Garlic powder or onion powder

Black pepper or red pepper flakes

Instructions

Add everything to a blender and blend until smooth and bright green

Heat a nonstick skillet over medium and lightly grease

Pour small pancakes and cook 2–3 minutes per side until set and golden

Flip, cook through, and repeat — breakfast is done!

TIPS:

Blend well so the spinach totally disappears (kid-approved 😉)

Keep pancakes small for easy flipping

Serve sweet with honey or savory with eggs and avocado
