1/2 lbs pork
1/2 lbs beef
1 onion chopped
2-3 celery stalks
2 medium carrots
2-3 tablespoons olive oil
3-5 oz pancetta
1 cup red wine
1/3 cup tomato paste
1 bay leaf
Couple dashes of nutmeg
2 cups chicken stock or broth (I use low sodium)
1 cup whole milk
Salt
Instructions
Hand chop onion into preferred size pieces. Use cuisinart to pulse carrots and celery.
Pour in olive oil and take beef and pork into small little pieces and lightly sear. Remove and set aside.
Cook pancetta for 5-7 min or until lightly browned. Add in onion mixture and cook for 10-15 min.
Salt
Add tomato paste
Add meat back into pot. Add red wine. Begin to break meat up.
Add nutmeg, more salt.
Cook for 12-15 min or until wine has reduced. (You should not smell wine)
Pour in chicken stock and milk.
Turn on low and stir occasionally for 3+ hours
