LENTILS AND BROWN RICE

1 lg. onion, chopped
1 Ig. green pepper, seeded and chopped
1 lg. red pepper, seeded and chopped (opt.)
3 carrots, chopped (opt.)
2 ribs celery, chopped (opt.)
2 parsnips, chopped (opt.)
2 T. cooking oil
1 c. dry lentils
1 c. uncooked brown rice
4 c. chicken broth
1 c. white wine (opt.)
Hot sauce (such as Tabasco, Texas
Pete, etc.)
Instructions
Sauté onion, green pepper, red pepper (if using), carrots, celery and parsnips in oil several minutes until tender. Add lentils, rice, broth and, if using, wine. Bring to boil. Reduce heat, cover and simmer 45 minutes or until all liquid is absorbed. Serve with hot sauce.
Notes
Very good left over. Freezes well. Experiment with your favorite vegetables or whatever you happen to have in refrigerator.
