Slow Cooker Cajun Chicken Pasta Bake

Ingrédients

4 chicken breasts, cut into chunks

2 peppers, chopped

1 red onion, chopped

3 garlic cloves, minced

Handful of chopped parsley

1 tin (400g) chopped tomatoes

2 tbsp hot sauce

3 tbsp Cajun seasoning

1 tbsp mixed herbs

2 tbsp @philadelpia or a soft cheese

100g light mozzarella or cheddar

250g spiral pasta, cooked

Instructions

Add all the ingredients to the slow cooker except the peppers, parsley, cheese and pasta. Cook on high for 3–4 hours on high or 7 on low.

When the time’s up, cook your pasta separately, then stir it into the slow cooker along with the chopped peppers and 2 tablespoons of soft cheese. Mix everything well until creamy.

Sprinkle grated mozzarella or cheddar over the top (OPTIONAL) place the slow cooker pot without the lid under the grill for about 5 minutes, until the cheese is melted and golden.

Finish with a sprinkle of coriander or parsley, fresh chilli serve, and enjoy 😊
